Vegetable Skin Chips

Turn those peels into something edible! Instead of discarding the carrot peel why not make some chips? They'll make a great snack!


Ingredients:

  • 2 cups (roughly) clean and dry Vegetable Skin strips

  • 1 tsp Cornstarch

  • Salt

  • Pepper

  • 1 tsp Olive Oil

Tools:

  • Baking Sheet

  • Parchment Paper

  • Mixing Bowl

  • Oven


Instructions:

  1. Preheat oven to 400 degrees.

  2. Place the vegetable skins in a mixing bowl and add corn starch, using a spoon toss the skins till evenly coated

  3. Season accordingly with salt and pepper and whatever your heart desires for your chip flavor! Spicy: paprika, garlic? Garlic powder, etc

  4. Drizzle olive oil into the bowl and toss again

  5. Empty the bag onto a baking sheet lined with parchment paper, into a single layer, avoid overlapping chips

  6. Bake 15-20 minutes, depending on the type of skins you have, until browned and crisp (they will crisp a little more as they cool). Carrot skins will take less time, potato skins more.
