French Toast with Last Night’s Baguette

The days of tossing a half eaten stale baguette in the trash the morning after spaghetti night are long gone. Making french toast with your stale baguette is a unique spin on a breakfast classic that is sure to please. Less sweet and denser than a traditional brioche, this recipe is great for those looking for a yummy rustic breakfast. This recipe can be easily adjusted and eyeballed, just make sure that your french toast batter is a light yellow color with visible flecks of cinnamon.


Ingredients:

  • Baguette, sliced into ½ in. pieces

  • 2 eggs

  • A splash of milk (any kind will do)

  • Butter

  • 1 Tbsp Sugar

  • 1 tsp Vanilla extract

  • 1 tsp Cinnamon

  • A dash of salt

  • Maple syrup (serving option)

  • Berries (serving option)


Tools:

  • A shallow bowl

  • Pan

  • Fork

  • Spatula


Instructions:

  1. Whisk eggs, milk, sugar, vanilla extract, salt, and cinnamon together in a shallow bowl with a fork.

  2. Place baguette slices in egg mixture. They should be at least half submerged, but the more submerged, the better. Soak for 2 minutes and flip the baguette slices over. Soak another 2 minutes.

  3. Heat butter in a pan on medium heat. Once the butter is melted and sizzling, place slices of soaked baguette onto the pan. Cook until the slices can easily move around the pan. The bottom of the slices should be a deep yellow-gold and will have dots of brown. Flip and cook the other side. Remove from the pan and place onto a serving plate.

  4. Repeat step 2 and 3 until all of the baguette slices have been cooked.

  5. Serve with maple syrup, fresh berries, or berry jam. Enjoy!
